tɛrra, the International Cooking School of White Truffle is opening in the Roddi Castle

Friday, October 30th, inaugural toast with the wines of Strada del Barolo. Saturday, October 31st and Sunday, November 1st, two open days with free tours. 

Its name will be tɛrra and will be opened on Friday, October 30th: it’s the International School of Alba White Truffle, which has found its home in the Roddi Castle. The name recalls the deep bond with the territory and focuses on three key ingredients: authenticity, locality and excellence of raw materials.

The Barolo & Castles Foundation, to which the Municipality of Roddi has given the custody of the castle kitchens, entrusted the Academy FoodLab of Turin – school of excellence in the culinary Piedmontese scenario, deeply rooted in the region capital – to provide a soul to a project that started out a few months ago, taking care of content and educational organization.

The International School of Alba White Truffle

tɛrra will host amateur and professional courses in Italian, English and French, in order to spread the enormous richness of the local cuisine and that of the Alba White Truffle. Some 600 square meters of total area and a modern kitchen with teaching stations equipped for 14 people, each with LCD monitor to better understand the chef’s teaching. But also wide spaces to create settings for business events, a classroom to organize tasting courses with local wines, which will soon become home to the Wine Tasting Experience®, a professional kitchen and a hall that in the future might become a dining room.

tɛrra will propose totally practical lessons, tutoring in Italian, English and French, traditional dishes of Piedmont and the Langhe territory, with particular attention to the use of truffles in all its forms. Furthermore, tasting of the precious Tuber Magnatum Pico, the use of white truffles and black truffles in the kitchen, cooking lessons lasting from two hours to half a day, in the morning and the afternoon. Finally, tailored lessons for lunch and dinner and, on request, every day of the year, culinary events and tastings, workshops and cooking team building.

Inside the Roddi Castle, thanks to a donation by his family, it will be opened, at the same time, the museum dedicated to Giacomo Morra, historic hotelier and restaurateur of the hotel “Savona” of Alba, who was rightly crowned King of Truffles already in 1933 by the “Times” of London and who was a pioneer in the international tourist promotion of Langhe through the Tuber Magnatum Pico.

And there will also be initiatives dedicated to wine with Strada del Barolo, which will offer, inside the Truffle Kitchen, food tastings as well as the renowned Wine Tasting Experiences®.

OPENING PROGRAMME

– Friday, October 30th, 6.00pm: ribbon-cutting ceremony of tɛrra, the International School of Alba White Truffle, and the Giacomo Morra museum inside the Roddi Municipal Castle, with inaugural toast offered by Strada del Barolo and grandi vini di Langa.

– Saturday, October 31st and Sunday, November 1st from 11.00am to 6.00pm: open day. The school will be open to all, free of charge, to be visited and get information.

– Saturday, October 31st, 6.00pm: at the International Fair of the White Truffle, in the Beppe Fenoglio hall, in Alba, show cooking of the chef Giovanni Naviglia from the FoodLab Academy.

– Every weekend in November – Saturday and Sunday – two cooking sessions with practical lessons lasting about two hours, from 11.00 am to 1.00pm and from 6.00pm to 8pm.

It will be a new challenge for the Roddi Castle, but also for the whole territory of Langhe and Roero, which will have, in the Truffle Cooking School a new tourist attraction and a precious service for the operators.
